Autumn Spinach Soup

It's getting cold outside…don’t you just want to cuddle under the covers with a good book and a great bowl of soup? Well, The Annex Hodge Podge has you covered.

This month’s feature recipe is “Autumn Spinach Soup”. You can enjoy this soup all year round, although its hearty texture really comforts the soul during the colder months of fall and winter. This recipe is great for cooks of all levels and all the ingredients can be found at your local grocery store. 


Autumn Spinach Soup
Serves: 12

4 tbsp Olive oil
2 Spanish onions, chopped
3 cloves of garlic, minced
4 cups of sweet potato, peeled and chopped
2 cups of carrots, peeled and chopped
1.5 lbs of  frozen chopped spinach
1/2 tbsp kosher salt
1/2 tbsp pepper
1 tsp thyme
6 cups of water
3 tbsp vegetable stock bouillon (use the powder to water ratio instructions on whichever vegetable stock you purchase) (e.g. my vegetable stock is 2 tbsp of bouillon powder for every 2 cups of water)


Method
1) Heat oil over medium low.
2) Add the onions and garlic and sauté
3) Add spices and continue to sauté until onions are soft
4) Add sweet potato, carrots, water, stock bouillon and bring to boil
5) Add spinach and turn the heat down to low for 30 minutes
6) Puree by hand or in the blender and enjoy
