COBS’ Ginger Bell Rock and Apricot Delight for the Holidays

SEASONAL RECIPE:

Apricot Delight Log Holiday Turkey Stuffing


1 COBS Bread Apricot Delight Log (crumbled)
2 stalks celery, finely chopped
1 small onion, finely chopped
1 cup pitted prunes
1 tbsp each of fresh parsley and fresh chives
1 tsp each of dried sage, dried rosemary, and thyme
1 egg
1 tbsp sweet sherry
water/white wine, as required
1 tbsp olive oil

Saute onions and celery in olive oil until clear and soft. Add dried herbs, prunes, sherry until warm (1-2 mins). Remove from heat. When mixture has cooled combine parsley, chives, crumbled COBS Bread Apricot log and egg. Mix until combined (add water/wine if necessary). Season with cracked pepper and salt.

Great as a chicken stuffing year round.
